The Platán cake

Tamás László, head of our pastry kitchen created the Platán signature cake, inspired by Platán flavors and the one of a kind environment. The base of the cake is a buttery pistachio sponge cake, with a pistachio cracker layer, with popping candy, champagne jelly made from Platán Champagne J. de Telmont, raspberry cream and Valrhona white chocolate mousse. The cake is decorated with a white chocolate icing and pistachio sponge.

Dark chocolate, cherry brandy, cherry marrow (gluten-free, lactose- and sugar-free)

Chocolate sponge cakes include cherry brandy mousse, on it boiled cherry marrow layer, chocolate mousse, dark chocolate spray on the surface, cherry gel on top

Chestnut mille-feuille

Vanilla, strawberry, rhubarb

Between caramelized butter pastries vanilla ganach, chestnut cream and white coffee mousse with rum cooked chestnuts and blood orange gel and orange fillet.
