The Platán cake
Tamás László, head of our pastry kitchen created the Platán signature cake, inspired by Platán flavors and the one of a kind environment. The base of the cake is a buttery pistachio sponge cake, with a pistachio cracker layer, with popping candy, champagne jelly made from Platán Champagne J. de Telmont, raspberry cream and Valrhona white chocolate mousse. The cake is decorated with a white chocolate icing and pistachio sponge.

Caramelized pastry layers filled with white chocolate vanilla ganache, topped with jasmine tea milk chocolate cream, marinated Williams pear slices, and pear “cheese.”
