The Platán cake

Tamás László, head of our pastry kitchen created the Platán signature cake, inspired by Platán flavors and the one of a kind environment. The base of the cake is a buttery pistachio sponge cake, with a pistachio cracker layer, with popping candy, champagne jelly made from Platán Champagne J. de Telmont, raspberry cream and Valrhona white chocolate mousse. The cake is decorated with a white chocolate icing and pistachio sponge.

MILLE-FEUILLE

Dark chocolate, cherry brandy, cherry marrow (gluten-free, lactose- and sugar-free)

Caramelized pastry layers filled with white chocolate vanilla ganache, topped with jasmine tea milk chocolate cream, marinated Williams pear slices, and pear “cheese.”

GOOSE FOOT

Cocoa almond sponge cake with chocolate ganache, a sour cherry filling in the center, surrounded by dark chocolate mousse. The surface is finished with a dark chocolate velvet coating, a red cocoa butter “mist,” and cherry dots.

Pecan

Pecan praline with milk chocolate and pecan cremeux on a sponge cake sprinkled with pecans, topped with cinnamon financier dough and pecan praline mousse with a layer of cranberry jelly. Topped with white chocolate cranberry whipped ganache.

Financier

A cake made from hazelnut flour and roasted butter with candied lemon pieces and a layer of hazelnut praline, topped with yuzu cream and dipped in white chocolate with roasted peanuts.
