The Platán cake
Tamás László, head of our pastry kitchen created the Platán signature cake, inspired by Platán flavors and the one of a kind environment. The base of the cake is a buttery pistachio sponge cake, with a pistachio cracker layer, with popping candy, champagne jelly made from Platán Champagne J. de Telmont, raspberry cream and Valrhona white chocolate mousse. The cake is decorated with a white chocolate icing and pistachio sponge.

TROPICAL MILLE-FEUILLE
Dark chocolate, cherry brandy, cherry marrow (gluten-free, lactose- and sugar-free)
Caramelized puff pastry layers filled with vanilla white chocolate cream, topped with coconut whipped ganache with a soft mango compote in the middle.

GOOSE FOOT
Cocoa almond sponge cake with chocolate ganache, a sour cherry filling in the center, surrounded by dark chocolate mousse. The surface is finished with a dark chocolate velvet coating, a red cocoa butter “mist,” and cherry dots.

Cottage cheese Ball
Lemon sponge cake with an elderflower cottage cheese mousse sphere, filled with strawberry compote and strawberry chocolate cream, topped with elderflower jelly and crispy almond crumble. Decorated with fresh strawberries and a “strawberry rose.”

Baked pastry made from pistachios and roasted butter, with blackcurrant pieces, encased in pistachio mousse, topped with blackcurrant jam, and dipped in pistachio chocolate.

Salty peanut – apricot
Cooked apricot purée on a cocoa sponge cake, layered with caramelized white chocolate cream and a crunchy hazelnut sheet, topped with whipped salted peanut cream, wrapped in caramelized white chocolate shells.
